Why Padellino? Our Story & Provenance
The pizza al padellino tradition comes from Torino, Italy, where small pans (“padellini”) are used to create a unique hybrid between focaccia and pizza: soft, airy, structured, and uniquely satisfying.
At Mico Italian Sandwich, we took inspiration from this technique and elevated it into our very own Focaccia al Padellino— making us the first and only sandwich shop in Canada specializing exclusively in Padellino-style sandwiches.

The Story of Mico — From Southern Italy to Canada
“Mico” comes from Domenico, a traditional southern Italian name — and it’s also the name of our founder.
Domenico moved to Canada in 2013 with his family, carrying a dream that never faded: to open a true Italian sandwich shop that represented the flavors he grew up with. For years, he worked tirelessly to perfect the recipe for his focaccia al Padellino — testing flours, fermentation times, hydration levels, and baking techniques until he achieved the ideal result.
Today, that passion lives inside every sandwich that leaves our kitchen. Mico Italian Sandwich is not just a business — it’s the realization of a childhood dream, built on family, tradition, and the flavors of Southern Italy.
